Ingredients for 2 servings:
•    1 Hokkaido Pumpkin
•    1 tablespoon butter
•    300ml vegetable broth
•    200ml coconut milk
•    2EL Pumpkin seeds
•    1TL grated ginger
•    1TL curry powder
•    salt, pepper

1.    Wash the Hokkaido thoroughly, remove the core and cut the pumpkin into pieces.
2.    Heat the fat in a pot and fry the pumpkin. Then add the vegetable broth, grated ginger and curry powder. Let everything simmer for about 10 minutes.
3.    Roast the pumpkin seeds without fat in a pan until they fragrant slightly.
4.    Remove the soup from the stove and puree it. Add the coconut milk and season to your preference.

Instead of pumpkin, carrots or sweet potatoes fit very well as well!
